Finest Cuisine at Sea

“After spending a few days aboard [Marina], you may begin to wonder if Marina has actually pushed Oceania across the line into luxury – CruiseCritic.com”

It may seem like an audacious statement to hail our cuisine as “the finest at sea”, but not when the legendary master chef Jacques Pepin serves as our Executive Culinary Director. With his genius for inspiration and his culinary wizardry for guidance, our immensely talented chefs masterfully create cuisine that earns rave reviews from our guests, course after delectable course.

All the ingredients for magnificence are present, in particular, the intimate nature of our ships, which enables our chefs to carefully and thoughtfully prepare each dish la minute. Nothing need be ever rushed or produced en masse. Menus artfully reflect the regions where our ships sail, enhancing the experience, adding authenticity and ensuring tremendous variety.

Grand Dining Room

Like a precious jewel imbuing the room with radiance, a luminous crystal chandelier crowns the center of the Grand Dining Room’s soaring ceiling. It is emblematic of the stateliness throughout, the warm grandeur of Marina’s most spectacular restaurant. Patterned after Europe’s exquisite 5-star restaurants, the dining area is handsomely decorated in rich woods, soft cocoa and hues of cream and gold, with splashes of apricot and cranberry. Tables are beautifully set with European bone china, sparkling Riedel crystal, gleaming silver and fine, cotton linens. The magnificence to follow is as stunning as the décor. The formally attired wait staff attends to each detail with flawless impeccability as they graciously serve course after course of European-inspired Continental cuisine or the healthy and savory fare of the world-renowned Canyon Ranch®. Menus change daily, with a brilliant selection of sumptuous dishes for breakfast and lunch, punctuated by at least six appetizers and nine entrées at dinner.

Jacques

Enter Jacques, the eminent Jacques Pépin’s first restaurant to bear his name on land or sea, and you will be instantly struck by the sensory pleasures. Luscious aromas waft from the gleaming glass and brass show rotisserie in the room’s heart, where duck, pork, chicken and veal roasts slowly turn, sealing in their succulent flavors. Handsomely decorated with rich fabrics, heirloom antiques, pickled wood furnishings and art from Jacques’ personal collection, it resembles a classic Parisian bistro. Exceedingly comfortable and clubby, the ambiance is pure French, as is the cosmopolitan yet wonderfully approachable cuisine.

Chef Pépin has taken the classics, deconstructed them, and then ingeniously re-created each remarkable dish. This is Coq Au Vin beyond the imagination, as you have never tasted it before. Rotisserie-roasted chicken falls off the bone, bursting with flavor. His Steak Frites pairs the succulence of prime beef with the crisp sweetness of pommes de terre. At Jacques, simple classic French cuisine becomes incredibly elegant and, of course, absolutely magnifique.

Red Ginger

Red Ginger makes an immediate and powerful statement with its decorative centerpiece: three fabulous, multi-colored Buddha heads, each carved from a single piece of glass and brightly lit from within. Then, with a nod to feng shui, the room unfolds in perfect harmony, the mood a study in tranquility. The décor simply radiates with ebony woods, bronze and hand blown glass light fixtures and eclectic, modern Asian artwork.

To complement the stunning interior, Red Ginger’s chefs have created a striking menu, noted for its contemporary interpretations of Asian classics. You might begin with a Salad of Roast Duck and Watermelon with Cashews, Mint and Thai Basil. Savor a Nutty Braised Beef Malay Curry with Coconut Rice and Paratha Roti. Or Asian-spiced Rack Of Lamb with Kohl Robi, Cream Spinach and Truffle Oil. For dessert, Green Tea Banana Cake with Toffee and Hazelnut Sauce Served with Coconut Ice Cream is the perfect ending. In Red Ginger, the gustatory pleasures are as striking as the visual ones.

Polo Grill

Polo Grill is simply timeless; a traditional intimate setting that personifies a classic steakhouse, courtesy of its crisp, white linen tablecloths, dark-wood furnishings upholstered in richly textured fabrics, and supple burgundy leather chairs. Each course is a consummate expression of time-honored favorites. Savor a succulent Colossal Shrimp Cocktail, followed by Lobster Bisque Topped with Morsels of Roasted Lobster. Enjoy a Caesar Salad prepared tableside. Delight in knowing that all of the beef dishes such as our signature 32-ounce, Bone-In King’s Cut Prime Rib are USDA Prime and dry-aged for at least 28 days. Other magnificent classics include Surf and Turf, featuring a grilled Florida Lobster Tail and tender Filet Mignon, and whole Maine Lobster Gratinée.

Toscana

Beautiful scenes of the fertile Tuscan countryside adorn Toscana, an artistic expression of the authentic dining experience awaiting guests. Simple yet keenly balanced, Tuscan cuisine evolved from rich family traditions, epitomized within Toscana, where many of our recipes originated with the grandmothers and mothers of our own Italian culinary staff. Similarly, the sommeliers are from long lines of wine-producing families, so they inherently know the characteristics of each vintage to perfectly complement your meal. Presented on elegant, custom-designed Versace china, each dish is a masterpiece that exemplifies the essence of Tuscany. Relish antipasti like Carpaccio of Beef Topped with Aged Reggiano Parmigiano or Sautéed Jumbo Scampi Tenderly Wrapped in Proscuitto San Daniele. Enjoy a traditional Porcini Mushroom Risotto with Caramelized Shallots and Fresh Thyme. Savor delectable entrées such as a Tender Bone-In Milk-Fed Veal Chop Grilled to Perfection and Topped with Sautéed Piedmonte Wild Mushroom Sauce.

Terrace Cafe

Days that begin in the Terrace Café always seem light and carefree. Perhaps it’s because the furnishings are so wonderfully inviting, or that the room is infused with natural sunlight from the floor-to-ceiling windows, stimulating the appetite for the sumptuous breakfast selections. Come lunch, the expansive menu of international dishes changes entirely, beautifully complemented by flavorful roasted and rotisserie meats, and the magic of the pizzeria’s oven. Feel free to dine inside or alfresco at one of the shaded teak tables on the terrace; both areas offer stunning panoramic views. Evenings, the fanciful Murano glass chandeliers glitter provocatively, the impeccably clad wait staff shines, and the menu bears a certain Mediterranean flair. You may indulge in whole Maine Lobster, delicately roasted duckling, made-to-order grill dishes and mouth-watering pastas and paellas.

Waves

Being open-air and just steps from the swimming pool, Waves Grill welcomes casual diners. Its laid-back ambiance invites guests to come directly from lounging in the sun, or for a quick meal between shore excursions. While the atmosphere is deliciously informal, the menu and preparation reflects the same attention to detail as the finest of restaurants. You can watch the chefs grill savory items such as gourmet burgers, tangy barbecue and succulent seafood to perfection. Side dishes include healthy, garden-fresh salads and crispy, piping-hot, hand-cut fries. For a refreshing dessert, there’s a variety of creamy gelatos, made-to-order sundaes topped with all the trimmings and thick, hand-dipped milkshakes.

Privée

Privée stands alone as Oceania Cruises’ most indulgent, one-of-a-kind dining experience. Even superlatives pale when describing Marina’s ultimate venue, which you may reserve solely for exclusive parties of as many as ten privileged guests. Opulently decorated with Ferrari Red carpeting, oversized white baby crocodile throne chairs, ornate Baroque millwork, and flanked by backlit onyx-clad walls, the setting for Privée is absolutely exquisite. A custom-made oval table, illuminated by a white Venini glass chandelier, lies at its heart, accentuating the culinary magic that awaits you.

Each guest may select any number of courses from Polo Grill, Toscana or a combination of both. Within the sanctum of Privée, dining engages all of the senses, leaving you and your guests immensely fulfilled. This private dining experience can be reserved for just $250 for a party of up to 10 privileged guests. Wine and other alcoholic beverages are additional.

La Reserve

The clink of wine glasses signals the beginning of a very special event, an exclusive affair for only 24 fortunate guests to savor La Reserve by Wine Spectator. Perched high atop Deck 12, La Reserve by Wine Spectator is decorated in a sophisticated decor to provide the ideal venue for wine tastings and gourmet dinners.

During the day, you might sample a flite of distinctive vintages from the wine cellar, each one hand-selected by the head sommelier to reflect the region of the world in which you’re sailing. Tastings are developed by Wine Spectator and do not require advanced reservations. Please check Daily Currents for specific times.

Evenings are reserved for more elaborate affairs, such as seven-course, gourmet dinners where each course is delightfully paired with carefully selected premium wines. The innovative menus are designed exclusively for that evening by the Executive Chef, pairing Oceania Cruises’ signature “finest cuisine at sea” with vintage wines recommended by the connoisseurs at Wine Spectator. It’s an experience food and wine aficionados will savor long after the affair has concluded. Advance reservation required.
